The wine bar - restaurant was originally founded by Australia's first Master of Wine, Michael Hill-Smith, in 1991, and has been catering to the fine food and wine connoisseur ever since. They offer their patrons a definitive selection of Australia and International wines with exceptional value and an outstanding selection by the glass. They continually change their lists with new vintages and varietals to tempt and tease your palate. These lists focus on wines they enjoy themselves.

Located in the heart of Adelaide's premier dining precinct the Universal Wine Bar has a world wide reputation, as an up market establishment and renowned for it's selection of over 300 wines from around the world. Vito Romano brings together caring, professional and friendly staff who love to serve and to treat you to a truly unique wine and food experience. The original ideals of Michael Hill Smith have been updated by Vito an honored custodian and his management team. They now also include a full bar of almost any beverage discerning taste buds would desire. Late into the evening the Universal Wine Bar turns into a fabulous night spot with cool jazz tunes, the perfect night out, whatever the occasion.

with a passion for great wine, fine food and excellent service, Vito's attention to detail ensures that all his patrons are treated to the very best of everything. Vito is a man with strong family values and commitment. He loves nothing better than a gathering of family, friends and business colleagues.
Vito and his family immigrated to Adelaide in the early 60’s bringing with them their essence of Italy and the Italian soul. He was born in Mondragone, Province of Caserta just north of the Amalfi Coast between Roma and Napoli. Famous for it’s food and wine like Buffalo Milk Mozzarella (the best in Italy) and the Antica Distilleria Petrone” (ancient distillery).

Vito says of his Italian heritage and his family’s passion for food and wine.

” I’ve been raised in the tradition of food and wine – it’s in my blood,”
“Our family was raised by a wine maker father, Salvatore and a wonderful cook our mother Cristina. Our parent’s passion for food and wine was instilled in us at an early age and we were raised with discerning palates. Their commitment to fresh seasonal produce and ingredients is where I draw from to bring our family dining experience to you, our dining guests at the Universal Wine Bar.

Vito's staff support his vision.

Head Chef Julian Velasquez utilizes locally and organically grown produce to create sumptuous menus to tempt and inspire even the fussiest of taste buds. Vito and Julian hand-pick all of our the seafood, which is predominately South Australian and caught daily.

Vito takes special care in passing his family secrets of Italian cuisine on to Julian, where he brings new life to these traditional dishes.

“We choose the finest quality Australian ingredients and infuse these ingredients with our Italian heritage by keeping the dishes, simple and fresh, so that the produce shines through”.
